Easy Whole Wheat Snickerdoodle Muffins

Makes 18 muffins


▪   1 cup organic rolled oats

▪   1 egg

▪   1 cup buttermilk (or 2 cups milk with 2 tsps lemon juice)

▪   1 teaspoon baking soda

▪   2 cups whole wheat flour

▪   1/3 cup evaporated cane juice

▪   1/4 teaspoon salt

▪   1 tbsp cinnamon

▪   1/4 cup coconut oil mixed with 2 tbsps butter


Preheat the oven to 350 degrees. Beat the egg, coconut oil and sugar together. In a separate bowl, mix the dry ingredients together. Add to the egg mixture, alternating with the buttermilk, until combined. Put in greased muffin tins and bake 15-20 minutes.

we like to add butter, or coconut oil and another dash of cinnamon to the top.
