jamaican jerk chicken

I’ll start with a disclosure – I’ve never been to Jamaica or had “real” Jamaican Jerk chicken.”
That said, this recipe was a winner with my family, and after making it twice, I think we have it tweaked to perfection…at least for us!

2-3lbs chicken meat (I’ve done it with both chicken breasts and pieces cut from a whole chicken)
1 large orange
2 tbsps olive oil
1 tbsp garlic
1 onion chopped
2 tbsps chopped cilantro
1 tsp chinese 5 spice
1 tsp ginger
1/4 tsp allspice
1 tsp Montreal steak seasoning
2 tbsp brown sugar
a few drops of habanero hot sauce, depending on how hot you like it

1) zest and juice orange in a small bowl.
add all ingredients except chicken, and mix well.
Pour this marinade over chicken pieces, then slice the orange and place slices on top.

Allow to rest and marinade in the fridge for at least 2 hours, up to a day. (this is key for tender, good-tasting chicken!)

Bake at 400 for about an hour.
Allow to rest in baking pan for 10 minutes before serving. If you want a little bit of blackened top, you can toss the chicken on a grill pan…but we have found this tastes just great as is!

We like it served with sweet potatoes and a side salad.
