Sweet potatoes are a nutritional powerhouse, full of vitamin A, potassium, and fiber. A little fat in the recipe will help your body absorb the vitamins. The marshmallows bring out the kid in all of us – who doesn’t like eating toasted marshmallows at dinner?
6 sweet potatoes, pierced and wrapped in foil
¼ cup butter or coconut oil
1 tsp cinnamon
1 package mini marshmallows
Bake sweet potatoes until soft, allow to cool, and remove peeling. This can be done a day ahead of time or while the turkey is roasting, about 45 minutes to an hour.
Mash in a bowl, adding butter and cinnamon.
Spread in a 9 x 13in pan, then top with marshmallows
Bake at 350 until marshmallow topping is brown
