For my first lentil recipe of the new year, I pretty much tossed together a bunch of leftovers from our chili and colcannon earlier in the week, but loved the results! Here’s what I did:
leftover 1 slice bacon crumbled, 1/2 diced onion, 1 cup green cabbage sauteed together (I kept some separate from the potatoes)
leftover 3 Tbsps tomato paste
1/2 bag lentils
I cooked the lentils, added the other ingredients and water to taste, then served over sauteed spinach with garlic and olive oil as well as brown rice. Next time I’ll take a picture – it looked pretty good too!
